What a fun morning!!!

This morning was so much fun, we want to the springville splash pad with our friends. We are so sad because they will be moving in a few days so this was our last time to really have some fun together. Suzannah and Siena are just a week or so a part and it's so fun to see them play and grow together! It was a beautiful day out today, perfect for the splash pad! Memorial Day

Happy late Memorial Day everyone! Yesterday was one of the best family days we've had in a long time. It was so nice, we didn't really worry about anything, we just had fun. The day started out with a somewhat lazy morning. Then we got ready and went to the mall to see if Sears had any good deals on a new washer/dryer (we need new ones really bad!). No luck but oh well. The trip was actually great though because I ended up finding a cardigan I really needed and a few shirts! I love it when I don't mean to go shopping and end up finding things! While we were there we let Suzannah play on the play place for a little bit, and she had so much fun! It was hard to get a clear picture of her!






After the mall we headed to Costa Vida (one of Joe and I's favorite restaurants) and picked up some salads for dinner. Mmmmm they are soo tasty! After our early dinner we changed into our swim suits and headed over to the Splash Pad here in Spanish Fork. I made Suzannah wear her rash guard swim suit and a hat since this was our first time in the sun and I really didn't want her to burn. She looked soo cute!




This was our first time going and Suzannah seemed to like it okay. I think she would've liked it more had there been some shallow water she could splash in, she didn't quite no what to do with the water just squirting up but she knew it must be fun cause there were so many kids running around having fun. :) Here are some cute pictures and video's of her playing in the water...









She finally gave up and decided that reading would be more fun. My little book worm! I love these pictures because she looks like an old lady reading the newspaper hahaha








When we got home Suzannah still enjoyed taking a bath and you could tell she had such a fun day with Mommy and Daddy :)




She even had pruned feet to show for it all :)

My birthday

I had a great birthday this year, thank you go everyone that made it so wonderful for me! My birthday fun all started with a fun family dinner at Texas Roadhouse last night. It was hard to be on a diet and be good for my birthday, especially with all the yummy rolls they overloaded our table with! It was so funny, we were a big group so they kept just throwing baskets of rolls on our table but there were only like 5 people at the table that could even eat them haha. At dinner my brother and sister in law gave me a cute card and a target gift card so I could buy some new clothes after I loose weight on this diet! I love how they slipped in some extra motivation for me to really stick to it, love you guys! After  Dinner we went to the mall and I got to pick out a really cute new pair of sandals which I really wanted! 

Today we just stayed home all day and lounged around, it was nice to just have a family day. Joe surprised me with a whole garden kit! He got me flowers, seeds for flowers, vegetable and herb seeds, tools, planters, gloves, soil, I mean the whole kit  and kaboodle, it was awesome! 


I have been wanting to do a garden this year so that was really fun. So later today we all sat outside and enjoyed the wonderful weather while we planted our garden. Suzannah loved playing in the dirt with us too :) 

This is how it turned out! I can't wait to see them start to grow!!!

My sister Anna came over with some of her kids and they surprised me with an awesome organizer basket for all my sewing stuff, a cute card and some yummy Chapstick! I'm so excited for my new sewing basket I really needed one!!


Also since I can't have a birthday cake I was so lucky and found a recipe for a cheesecake I could make with our diet food, so I made that and that was my birthday cake. It was pretty yummy too, thank goodness!!!


Now my birthday is coming to an end but I'm so excited because Joe is going to let me watch a total chick flick tonight :) hehe. 

Overall these last two days have been fun and I feel very loved! Thank you to everyone for all the gifts and birthday wishes!

"Spaghetti and Meatsauce"

Okay guys I have to say this is one of my favorite dinners now, and it's sooo healthy!!! yay!!! It's so good Joe and I have had it two nights in a row now haha! My sister Sara actually told me about this recipe and I had heard of it on another website too so that just confirmed I had to give it a try. Oh and I'm so glad I did because it is AMAZING!!! Sorry it's not that good of a picture but just trust me don't skip out on this recipe, if you like Spaghetti you will love this recipe! Basically you take a spaghetti squash, whatever meat you want, and spaghetti sauce and wala it's amazing! Here is a more detailed recipe for you...

Ingredients:
1 Spaghetti Squash (this makes a lot of "pasta" probably enough for atleast 4 people)
1 Jar of Spaghetti Sauce/ or you can make your own but make sure if you buy it, it doesn't have high fructose corn syrup. The one I found in the picture below I found at Fresh Market and I was completely wowed by how amazing it tasted! I honestly could've eaten just the sauce alone it was so good!

1lb Ground Turkey or beef whichever you prefer

Olives (optional)


Directions:
Cut a spaghetti squash in half and deseed it. Place the open side face down on a cookie sheet that has been lined with tin foil. Bake in the oven at 450* for 30-40mins.

Meanwhile cook your meat and warm up your sauce.

When the squash is done carefully scoop out the insides, its amazing how it really does look like spaghetti noodles when you scoop it out! If you get some chucks I just used a fork to shred it up. Top your "noodles" with your meatsauce and top with olives.

This really is soo yummy and I definitely think it will be a for sure staple in our house from now on. It's so funny Joe and I can't stop talking about how good it was lol. I hope you all enjoy it!!!

Suzannah is 11 Months old!









Wow where did the last month go, or how about the last 11!!! I can't believe Suzannah is almost 1yrs old already. Suzannah turned 11 months old on Sunday May 4th. It's so fun to see her changing so much. She has definitely started to become more and more like a little toddler and she is always trying to be so big.


She barely even wants to eat baby food anymore, she just wants normal food haha. Her latest additions to her diet are mac n' cheese, rice and chicken noodle soup.
 


She is about ready to walk, she has taken about 6 steps and it's cute to watch her try so hard. It's cute to watch try even more on her own when she thinks I'm not watching, she is just like her mama and dada, she is determined to figure it out lol. I love that she has so much fun trying to do it too, she just laughs and laughs, she doesn't get mad or frustrated at all.



 





















Lately her hair has grown in some more and is getting some precious little curls in the back that I'm absolutely loving! It is also long enough now that we have upgraded from headbands to hair clips. :)


I think it was in this last month that she also found out that going down the slide on the playground is fun. We usually take a walk everyday and that is like the highlight of her day, she loves being outside and seeing everything the world has to offer.

She still is somewhat shy at the playground but she loves to watch the other kids play and often times gets a kick out of what they do. I definitely think she misses her cousins because it wasn't until our trip to WA last month that she had any interest in other kids whatsoever. Now I will catch her in her room crawling over to the diaper box just so see another "baby" :)

Overall she is at a really fun stage right now and I think it's just going to get more fun. I love that I get to spend all my time at home with her and that I have such an amazing husband that works so hard to let me.

Herb Crusted Halibut

This is one of the many halibut recipes I wanted to try out since we are trying to incorporate more fish into our diets. I'm still getting used to the idea of trying to like fish but these awesome recipes are definitely helping! With this recipe I unfortunately didn't have any fresh ingredients so I had to use all dry which was still good however I am definitely looking forward to trying it with all the fresh next time. Here is the recipe for you, enjoy!!!


Herb Crusted Halibut
Ingredients
Original recipe makes 4 servings        

3/4 cup panko bread crumbs

                
                
                
                
                
                
                
 

Place halibut fillets onto the prepared baking sheet.

Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.






 

Oatmeal Craisins White Chocolate Chunk Cookies

A friend of ours came over about a week ago and really helped us out so I needed to make some treats for him. I had never tried this recipe before and I was dying to so this was a good excuse. Here is the recipe, they turned out really yummy!!

Oatmeal Craisins White Chocolate Chunk Cookies
Yields: Approx. 2 1/2 Dozen

Ingredients:
2/3 Cup butter or margarine, softened
2/3 Cup brown sugar
2 large eggs
1-1/2 cups old-fashioned oats
1-1/2 cups flour
1 tsp baking soda
1/2 tsp salt
2/3 cup craisins dried cranberries
2/3 cup white chocolate chunks or chips

Directions:
Preheat oven to 375*. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda, and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks. Drop by rounded teaspoonful's onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Homemade Chicken Noodle Soup

I have been wanting to make Joe homemade chicken noodle soup since Joe and I got married! Why it took me this long to finally do it and on a warm sunny day, I don't know, but I finally did. He is always saying that the noodles aren't good or thick enough so I was on a quest for the best noodles out there and sure enough I think I found them! Or they are at least to Joe's satisfaction :) You of course don't have to make them as thick or wide as I did, I personally thought they were a little thick but it's totally up to you! I really liked the overall taste of the soup. This recipe is a bit chunky or hearty whichever one you want to call it. I think next time I will make about 2 more cups or so of broth just to make it perfect.



Suzannah was quite happy with this dinner as well as she could eat it all and boy did she eat it all right up!

Here is the recipe, enjoy!
Homemade Chicken Noodle Soup (Noodle recipe below)
Yield: about 4-6 servings

Ingredients:
1/2 of a medium yellow onion, diced
1 cup diced fresh carrots (about 2 carrots), you can add more if you want
1 cup diced celery (about 2 stalks) or more if you want
1 Tablespoon butter
6 cups water (next time I think I will do 8)
6 teaspoons of chicken bouillon (so 8 next time)
8oz of chicken (I just used a chicken breast cause that's all I had but I know using a rotisserie chicken would be amazing or even boiling a whole chicken can give you some amazing chicken stock! So don't limit yourself here.)
1/2 tsp black pepper
1/2 tsp dried basil
1/4 tsp dried thyme leaves
a dash of dried bay leaves


Directions:
Dice up all the vegetables. Melt 1 Tablespoon of butter in a large skillet and saute until vegetables are soft. In a large pot boil your water and then stir in your bouillon. Add the vegetables to the pot and then use the skillet to cook your chicken breast. Once chicken is done cut into bite size pieces and add to the pot. Add the spices and bring it all to a boil. Reduce to a simmer for about 30 minutes or until vegetables are done. Do your noodles while this is simmering. I cooked noodles in a separate pot and then drained them and added them to the soup.


Homemade Noodle recipe

Ingredients:
2 1/2 cups all-purpose flour
1/2 cup milk
2 egg
1 tbs butter, melted
1 tsp salt

Directions:
In a large bowl combine the flour and the salt.  In a medium bowl combine the milk, egg and melted butter.  Whisk to combine and beat the egg.  Make a well in the middle of the flour and add the egg mixture.
Stir the dough until it forms a ball and then turn it out onto a floured surface and knead it until the dough is smooth.  Roughly 5 minutes.  Then place the dough back into the large bowl and cover with plastic wrap.  Let the dough rest for 10-15 minutes.
Once again turn the dough out onto the floured surface.  This time flour a rolling pin and roll the dough out to about 1/4 inch in thickness. Flip your dough once while rolling out to ensure a easier process (sometimes if you just roll on one side then it gets too much flour and wont stick therefore making it harder to roll out).
Then cut the dough into desired noodle shapes with a pizza cutter or similar device.
(this website had them hang and dry for a while but I just cooked them and they were fine.)
To cook, place the noodles into salted boiling water and cook for 3-5 minutes depending on desired doneness.
Drain and then add to soup or top with sauce for some amazing pasta! :)
